  • 1 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups diced apples
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add in eggs, one at a time, then stir in vanilla extract and sour cream until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in diced apples.
  7. Divide the batter among the cupcake liners, filling each about 2/3 full.
  8. In a small bowl, mix together brown sugar, oats, and cinnamon for the topping. Sprinkle evenly over each cupcake.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let cool before serving.
