2 cups cooked chicken, shredded
1 cup rice, cooked
1 can black beans, drained and rinsed
1 cup corn, frozen or canned
1 cup salsa
2 cups cheese, shredded
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 bell pepper, chopped
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, half of the cheese, and the spices.
Transfer the mixture into a greased baking dish.
Top with the remaining cheese.
Bake for 25-30 minutes, or until the cheese is bubbly and golden.
