This Chicken Burrito Casserole is a delicious variation on a classic family favorite, combining juicy chicken, flavorful spices, and all your favorite burrito toppings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups cheese, shredded
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 bell pepper, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, half of the cheese, and the spices.
  3. Transfer the mixture into a greased baking dish.
  4. Top with the remaining cheese.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
