  • 4 chicken thighs
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and black pepper to make the chimichurri sauce.
  2. Place chicken thighs in a dish and pour half of the chimichurri sauce over them, marinating for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken thighs for 6-7 minutes on each side, or until cooked through.
  5. Serve with the remaining chimichurri sauce on top.

Notes

  • Best served fresh off the grill.
  • Store leftover chicken in an airtight container in the refrigerator.
