  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 2 cups onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry white wine
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 slices turkey bacon, chopped

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat.
  3. Season the roast with salt and pepper, then sear it on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add the onions and sauté until caramelized.
  5. Add the garlic and cook for another minute.
  6. Pour in the beef broth and white wine, scraping up any browned bits.
  7. Stir in the Worcestershire sauce, thyme, rosemary, and bacon.
  8. Return the roast to the pot, cover, and place it in the oven.
  9. Cook for about 3 to 4 hours until the meat is tender and falls apart easily.
  10. Let it rest for 10 minutes before slicing and serving.
