9 sheets lasagna noodles
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
8 ounces mushrooms, sliced
10 ounces fresh spinach
15 ounces ricotta cheese
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 teaspoon Italian seasoning
1 teaspoon salt
1/4 teaspoon black pepper
2 cups marinara sauce
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until softened.
Add mushrooms and cook until tender. Stir in spinach and cook until wilted.
In a bowl, combine ricotta cheese, Parmesan, Italian seasoning, salt, and pepper.
Spread a thin layer of marinara sauce in the bottom of a baking dish. Layer 3 lasagna noodles, half the ricotta mixture, half the spinach and mushroom mixture, and a layer of mozzarella.
Repeat the layers, ending with noodles and marinara sauce. Top with remaining mozzarella.
Bake for 45 minutes or until bubbly and golden.
Let cool for 10 minutes before slicing and serving.
Notes
For a vegetarian option, use vegetable broth instead of chicken broth.
Feel free to add more veggies like bell peppers or zucchini.
