A comforting and hearty stew packed with creamy tomatoes and white beans, perfect for chilly evenings.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced tomatoes, white beans, vegetable broth, oregano, basil, and red pepper flakes. Bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a splash of balsamic vinegar before serving.
  • This stew can be made ahead of time and stored in the fridge.
