  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 2 cups spinach, fresh
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, add ground turkey, onion, and garlic. Cook until the turkey is browned.
  3. Stir in crushed tomatoes, chicken broth, and broken lasagna noodles. Season with Italian seasoning, salt, and pepper.
  4. Simmer for about 15 minutes or until noodles are tender.
  5. Stir in spinach and cook until wilted.
  6. Remove from heat and stir in ricotta, mozzarella, and Parmesan cheeses.
  7. Crumble the turkey bacon on top and serve warm.

Notes

  • For extra flavor, consider adding red pepper flakes.
  • You can use regular bacon or other types of pasta if preferred.
