Ingredients

  • 12 large eggs
  • 1 cup mayonnaise
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 cup corn, grilled
  • 1/4 cup cilantro, chopped
  • 1/4 cup cotija cheese, crumbled
  • 1 jalapeño, diced
  • salt to taste

Instructions

  1. Hard boil the eggs and allow them to cool.
  2. Cut the eggs in half and scoop out the yolks into a bowl.
  3. Add mayonnaise, lime juice, chili powder, and smoked paprika to the yolks; mix until smooth.
  4. Fold in grilled corn, chopped cilantro, cotija cheese, and jalapeño.
  5. Season with salt to taste.
  6. Pipe or spoon the mixture back into the egg white halves.
  7. Garnish with extra cotija cheese and cilantro.
  8. Serve chilled.
