Ingredients

  • 2 cups almond flour
  • 1/2 cup honey or maple syrup
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the pumpkin puree, eggs, and honey or maple syrup.
  3. In another bowl, mix the almond flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually combine the wet and dry ingredients until well mixed.
  5. Pour the batter into the prepared muffin tin.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool before serving.
