A delightful casserole combining the flavors of French onion soup with tender chicken and orzo, topped with crispy turkey bacon.

  • 1 pound chicken breast, diced
  • 8 ounces orzo pasta
  • 1 large onion, sliced
  • 4 slices turkey bacon, chopped
  • 2 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and turkey bacon, cooking until onions are caramelized.
  3. Add diced chicken to the skillet, cooking until browned.
  4. Stir in the orzo, chicken broth, garlic powder, thyme, salt, and pepper. Bring to a simmer.
  5. Transfer the mixture to a baking dish, cover with aluminum foil, and bake for 25 minutes.
  6. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes or until cheese is melted and bubbly.
