1 cup dark chocolate chips
Instructions
In a mixing bowl, combine pumpkin puree, almond flour, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
Mix until the ingredients are well combined.
Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
Once chilled, scoop out small portions of the mixture and roll them into balls.
Melt the dark chocolate chips in a microwave or double boiler.
Dip each pumpkin ball into the melted chocolate, coating thoroughly.
Place the coated truffles on parchment paper and let them set in the fridge until the chocolate hardens.
Notes
