  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 2 dried guajillo peppers
  • 1 chipotle pepper in adobo sauce
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until soft.
  3. Add the beef, spices, and peppers, stirring to combine.
  4. Pour in the beef broth, bring to a boil, then reduce to a simmer.
  5. Cover and let cook for about 3 hours, until the beef is tender.
  6. Remove beef, shred it, and return it to the pot.
  7. Heat tortillas in a skillet and fill with the shredded beef.
  8. Top with chopped cilantro and serve with lime wedges.

Notes

  • For extra flavor, marinate the beef overnight.
  • Adjust spice level by adding more or fewer chili peppers.
