- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 dried guajillo peppers
- 1 chipotle pepper in adobo sauce
- 4 cups beef broth
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until soft.
- Add the beef, spices, and peppers, stirring to combine.
- Pour in the beef broth, bring to a boil, then reduce to a simmer.
- Cover and let cook for about 3 hours, until the beef is tender.
- Remove beef, shred it, and return it to the pot.
- Heat tortillas in a skillet and fill with the shredded beef.
- Top with chopped cilantro and serve with lime wedges.
