  • 1 pound chicken thighs, boneless and skinless
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach, fresh
  • 1/4 cup parsley, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Add the chicken thighs and cook until browned on all sides.
  4. Stir in the oregano, salt, and pepper.
  5. Add the orzo and chicken broth, bring to a simmer.

  7. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
