A comforting and easy-to-make dish that combines chicken and orzo in one pot for a delightful meal.

Ingredients

  • 1 pound boneless chicken thighs
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and cook for an additional minute.
  4. Add the chicken thighs and cook until browned.
  5. Stir in diced tomatoes, chicken broth, orzo, oregano, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 15-20 minutes until orzo is cooked through.
