A rich and hearty beef stew made easy with a slow cooker, perfect for family dinners.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices bacon, chopped
  • 4 cups red wine
  • 2 cups beef broth
  • 3 carrots, sliced
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 8 ounces mushrooms, sliced
  • 3 tablespoons flour

Instructions

  1. In a skillet, cook the bacon until crisp. Remove and set aside.
  2. In the same skillet, brown the beef cubes on all sides.
  3. Add onions and garlic; cook until softened.
  4. Transfer everything to the slow cooker.
  5. Pour in wine, beef broth, and add tomato paste, thyme, and bay leaves.
  6. Cover and cook on low for 8 hours.
  7. Stir in mushrooms and cook for an additional 30 minutes.
  8. Serve warm with crusty bread.

Notes

  • If you prefer a thicker sauce, mix flour with a little water and stir in before serving.
