- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices bacon, chopped
- 4 cups red wine
- 2 cups beef broth
- 3 carrots, sliced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 8 ounces mushrooms, sliced
- 3 tablespoons flour
- In a skillet, cook the bacon until crisp. Remove and set aside.
- In the same skillet, brown the beef cubes on all sides.
- Add onions and garlic; cook until softened.
- Transfer everything to the slow cooker.
- Pour in wine, beef broth, and add tomato paste, thyme, and bay leaves.
- Cover and cook on low for 8 hours.
- Stir in mushrooms and cook for an additional 30 minutes.
- Serve warm with crusty bread.

- If you prefer a thicker sauce, mix flour with a little water and stir in before serving.
