  • 1 pound boneless chicken breasts
  • 1 cup salsa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • 4 cups cooked rice or quinoa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Place the chicken in the slow cooker and add the salsa, black beans, corn, cumin, chili powder, and lime juice.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
