This Sun-Dried Tomato Pasta Will Make You Ghost Your Regular Mac & Cheese

Ingredients

  • 8 ounces pasta of your choice
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and heavy cream, stirring to combine.
  4. Lower the heat and mix in Parmesan cheese, stirring until melted.
  5. Season with salt and black pepper.
  6. Toss the cooked pasta in the sauce until well coated.
  7. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For a vegetarian option, use vegetable broth instead of cream.
  • Add spinach or arugula for extra greens.
