Ingredients

  • 8 ounces pasta
  • 1 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 tablespoons fresh basil, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat oil from the sun-dried tomatoes over medium heat. Add garlic and sauté for about 1 minute.
  3. Add sun-dried tomatoes and cook for another 2 minutes.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in grated parmesan cheese until melted and creamy.
  6. Add the cooked pasta to the skillet and mix well.
  7. Season with salt and pepper as needed. Stir in fresh basil before serving.

Notes

  • For a vegan option, substitute heavy cream with coconut cream and parmesan with a dairy-free alternative.
  • This dish pairs well with a side salad.
