- 8 ounces pasta
- 1 cup sun-dried tomatoes, packed in oil, drained and chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 2 tablespoons fresh basil, chopped
- Salt to taste
- Pepper to taste
- Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet, heat oil from the sun-dried tomatoes over medium heat. Add garlic and sauté for about 1 minute.
- Add sun-dried tomatoes and cook for another 2 minutes.
- Pour in the heavy cream and bring to a simmer.
- Stir in grated parmesan cheese until melted and creamy.
- Add the cooked pasta to the skillet and mix well.
- Season with salt and pepper as needed. Stir in fresh basil before serving.

- For a vegan option, substitute heavy cream with coconut cream and parmesan with a dairy-free alternative.
