These Thai Peanut Chicken Wraps are a delicious and easy homemade twist, perfect for a quick meal or snack!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup red bell pepper, sliced
  • 1 cup carrots, shredded
  • 1 cup cucumber, julienned
  • ½ cup Thai peanut sauce
  • 4 large lettuce leaves

Instructions

  1. In a bowl, combine the shredded chicken, red bell pepper, carrots, cucumber, and peanut sauce. Mix well.
  2. Lay a large lettuce leaf on a flat surface. Spoon the chicken mixture into the center of the leaf.
  3. Wrap the sides of the lettuce over the filling, then roll up from the bottom to the top.
  4. Repeat with the remaining leaves and filling. Serve immediately.

Notes

  • For extra crunch, add peanuts on top of the filling.
