2 cups all-purpose flour
1 cup unsalted butter, chilled
1/2 cup granulated sugar
1/2 teaspoon salt
6 tart apples, peeled and sliced
1 cup brown sugar
1 teaspoon cinnamon
1/4 cup toffee bits
1 egg, beaten (for egg wash)
2 cups whole milk
1/2 cup granulated sugar (for custard)
1/4 cup cornstarch
4 egg yolks
1 teaspoon pure vanilla extract
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs.
Press dough into a pie pan and refrigerate for 30 minutes.
In a separate bowl, combine apples, brown sugar, and cinnamon.
Fill the pie crust with the apple mixture and sprinkle toffee bits on top.
Cover with a top crust, seal edges, and cut slits for steam to escape. Brush with beaten egg.
Bake for 45-50 minutes or until golden brown.
While the pie is baking, prepare the vanilla custard. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
Cook over medium heat until thickened, then stir in vanilla extract.
Serve the pie warm with a drizzle of vanilla custard over the slices.
Notes
For a crunchy top, sprinkle some extra toffee bits on the pie before baking.
