Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, chilled
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 6 tart apples, peeled and sliced
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup toffee bits
  • 1 egg, beaten (for egg wash)
  • 2 cups whole milk
  • 1/2 cup granulated sugar (for custard)
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Press dough into a pie pan and refrigerate for 30 minutes.
  4. In a separate bowl, combine apples, brown sugar, and cinnamon.
  5. Fill the pie crust with the apple mixture and sprinkle toffee bits on top.
  6. Cover with a top crust, seal edges, and cut slits for steam to escape. Brush with beaten egg.
  7. Bake for 45-50 minutes or until golden brown.
  8. While the pie is baking, prepare the vanilla custard. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
  9. Cook over medium heat until thickened, then stir in vanilla extract.
  10. Serve the pie warm with a drizzle of vanilla custard over the slices.

Notes

  • For a crunchy top, sprinkle some extra toffee bits on the pie before baking.
  • Use a mix of sweet and tart apples for the best flavor.
