- 1 cup pumpkin puree
- 1/2 cup vanilla pudding mix
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, mix together the pumpkin puree, vanilla pudding mix, sugar, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
